Spelt, also described as "Gallic wheat", is a cereal similar to soft wheat. Known for its nutritional quality and its high protein content, spelt which is slightly nutty, is often qualified of "caviar of cereal". The traditionnal method of precooking uses steam, a method preserving spelt's nutritional qualities.
Place the pre-cooked spelt in 3 times its volume of lightly-salted water. Slowly bring to the boil then cook over a medium heat for 20–25 minutes. Season to taste. Enjoy precooked spelt as a side dish (to meat, fish or vegetables), in gratin, in veggie burgers and in soup. Keep in a cool, dry and dark place.
