Azuki is a legume of the bean family, grown and consumed in Japan and China. It is often eaten sweetened as a paste for desserts. Their cultivation has recently been introduced in the United States and Europe, particularly in Italy.

Soak the azuki beans for 12 hours, then drain. Place 1 volume of beans in 3 volumes of lightly-salted water and cook for 45 minutes. Azuki beans can be consumed just like other legumes: as a side dish to hot meals (such as meat, fish, rice or vegetables); as a purée; or mixed into a salad. In Asia, azuki beans are mainly used to make desserts. Keep in a cool, dry and dark place.
