Beans, like broad beans and chickpeas, are a "protein-rich" seed cultivated for its high protein and fiber content. The legume sold in France under the name "Green Soy" (used for the production of soy sprouts), even if it is not of the same botanical species as yellow soy, is actually a species close to the bean. It is also known as "mung bean" green bean. It is native to Asia. Its introduction in France was the result of consumer enthusiasm for Asian cuisine.

Germination: soak the mung beans overnight in a salad bowl of water. Once they have swollen, rinse well. Place the beans in your seed sprouter (also known as a germinator) in a dark, temperate environment, remembering to rinse them twice daily until they're ready to be consumed. Germination time: 4–6 days. Mung beans can also be cooked, for 35 minutes in 3 times their volume of water. Once sprouted, mung beans are delicious in salads or when stir-fried in a wok alongside vegetables, meat or fish. Keep in a cool, dry and dark place.
