Red kidney beans can be eaten hot alongside sauce dishes, vegetables or rice. They feature in numerous Mexican recipes, including chili con carne and bean salads. Soak the red kidney beans for 24 hours, then drain. Cook the beans in lightly-salted, boiling water for 1 hour. Keep in a cool, dry and dark place.
