Organic "golden" yellow lentils
Rinse the lentils. Place them in unsalted, boiling water (to stop them from hardening) and cook for around 25 minutes over a very low heat. Drain and use as desired. Lentils are well-suited to smoky-flavoured dishes, charcuterie and pork (for example, they’re a traditional ingredient in the French dish, petit salé). For a little more originality, try pairing them with smoked salmon. Lentils are also delicious in soup, purées and stews, or even cold in salads. Keep in a cool, dry and dark place.
