Green lenses are the most widespread in France. They seduce by their cooking speed and digestibility. They are very dark green. The Anicia variety is similar to the one growing on the lands benefiting from the Appellation d'Origine Contrôlée du Puy.
Organic green lentils
Lentils are well-suited to smoky-flavoured dishes, charcuterie and pork (for example, they’re a traditional ingredient in the French dish, petit salé). For a little more originality, try pairing them with smoked salmon. Lentils are also delicious in soup, purées and stews, or even cold in salads. Rinse the lentils. Place 1 volume of lentils in 3 volumes of unsalted, cold water (to prevent them from hardening) and cook for 25 minutes. Keep in a cool, dry and dark place.
