The Beluga lentil, native to Canada, is often considered the fine flower of lentils because of the particularity of its seeds, which are round, smooth and shiny. Its unique taste and its naturally black color have earned it the nickname "vegetable caviar".

Tips for use
Rinse the lentils. Place 1 volume of lentils in 3 volumes of unsalted, cold water (to prevent them from hardening) and cook for 20 minutes. Lentils are well-suited to smoky-flavoured dishes, charcuterie and pork (for example, they’re a traditional ingredient in the French dish, petit salé). For a little more originality, try pairing them with smoked salmon. Lentils are also delicious in soup, purées and stews, or even cold in salads. Keep in a cool, dry and dark place.
