Black rice is a brown long grain rice grown in Thailand and has a naturally pigmented purple black shell. However, this shell produces a longer cooking time than for traditional rice. In Asia, unmachined black rice is used as a natural dye in pastry, dough balls, porridge, New Year's cake and black wine.

Tips for use
Allow approximately 60g rice per person. Place the rice in a saucepan and cover generously with cold water. Bring to the boil then cook over a medium heat for 25 minutes. Drain and rinse. Black rice will bring colour and originality to your meals. Keep in a cool, dry and dark place.
