Mediterranean rillettes, vegan recipe, lactose-free and gluten-free.

Preparation

Step 1

In a saucepan, soak 65 g of Mediterranean vegetable mince in 300 ml of water according to the instructions on the packaging.

Step 2

Wash and cube the courgettes. Pit the olives and dice them.

Step 3

In a hot frying pan, sauté the pressed garlic, olives and courgettes.

Step 4

Then add the Mediterranean mince, with the rest of the cooking water if any. Sweat all the ingredients together. Add a few tablespoons of water, cover and simmer for 5 minutes.

Step 5

Allow the mixture to cool slightly. Put the preparation in a blender, together with the rice milk and rice flour, salt and pepper. Pulse to keep some chunks in the rillettes.

Step 6

Allow to cool, put in a jar.

Step 7

You can enjoy immediately or leave in a jar in the fridge for up to 5 days.
