Preparation

Step 1

Prepare the melon by cutting it into slices and then into pieces. Set aside.

Step 2

In a saucepan, add the sugar and a little water. Bring to a boil for 2 minutes and then reduce over medium heat for 5 minutes. Stir regularly.

Step 3

Pour in the balsamic vinegar slowly and cook for 5 minutes over medium heat to obtain a slightly thick caramelised consistency.

Step 4

Place the sesame seeds in a container.

Step 5

Prick the melon cubes with a wooden skewer. Dip the melon in the caramel and then in the sesame seeds to coat the lower part of the melon. Repeat for all the melon cubes.

Step 6

Allow to cool before serving.
